Scrambled Tofu With Spinach
Tofu is a very versatile food. This scrambled tofu with spinach recipe mimics the look and taste of scrambled eggs with spinach. If you do it right, it will taste even better than eggs, and it will be so much healthier.
Ingredients
- 1 each onion, medium, chopped
- 1/2 cup mushrooms, fresh, sliced
- 1/4 cup spinach, frozen, thawed
- 1/2 Tbsp olive oil
- 350 gm tofu, firm
- 1/4 tsp garlic salt
- 1 tsp parsley
- 1 tsp turmeric
- 1 tsp soy sauce
- 1/2 cup tomatoes, chopped
Instructions:
Sauté mushrooms, onion, and spinach in a nonstick fry pan with oil. Add crumbled tofu and simmer with seasonings until moisture is gone. The final consistency should be similar to that of scrambled eggs. When ready to serve, top with chopped tomato. Serve hot.
